Avocado with Poached Egg

What You Need:

  1. 2 Eggs
  2. 1 Avocado
  3. Diced Jalapenos or Bell Peppers
  4. Salt and Pepper

What You Do:

  1. Poach both eggs. You can also do this with fried eggs…
  2. Cut avocado in half, take seed out, and put one egg in each side.
  3. Top with jalapenos or bell peppers (or both!), Sprinkle some salt and pepper and then enjoy your yummy, healthy breakfast/snack!
