Chicken Curry Potatoes

What You Need:

  1. 1 cup Plain Yogurt (nonfat is fine)
  2. 6-8 oz of Chicken Breast
  3. 4 medium red potatoes
  4. white onion
  5. tomatoes
  6. Turmeric
  7. Curry Powder
  8. 2 lemons
  9. Olive Oil
  10. Cloves
  11. Garlic

What You Do:

  1. Cut everything up into bite-sized chunks – Chicken, Potatoes, Onions, and Tomatoes
  2. In a pan, heat up some oil and begin cooking the potatoes. Sprinkle the potatoes with turmeric and curry powder.
  3. While the potatoes are cooking, mix the chicken into the yogurt. Squeeze the lemons into the mix, add turmeric and curry powder. Let the chicken sit in the yogurt while the potatoes cook. This will take awhile. You want the potatoes fairly soft before it gets added in – so anywhere from 15-20 minutes.
  4. In a separate pot, add in the yogurt-chicken mixture, and put the heat on low. Add in a bit of water.
  5. Add the potatoes into the pot, and add the onions and garlic into the pan that had the potatoes. Saute the onions for a bit and add the onions and garlic into the pot.
  6. Let it all cook until the chicken is cooked (~10-15 minutes). You can raise the heat to medium.
  7. Add in the tomatoes and mix heavily. Let it all simmer and taste to see how much salt you may or may not want to add.
  8. Let everyone begin coming into the kitchen, asking if it’s ready or not. Because, naturally, they’ve been smelling the deliciousness for awhile now.
