Cauliflower Mac n Cheese

What You Need:

  1. 1 large head of cauliflower cut into small florets
  2. cooking spray
  3. 1 cup heavy cream
  4. 2 tbsp paprika
  5. 1 tbsp mustard powder
  6. 1 tbsp garlic powder
  7. 2 oz cream cheese (light for less calories)
  8. 1 packet shredded mozzarella cheese (skim or 2% = less calories)
  9. salt to taste
  10. pepper to taste

What You Do:

  1. In a separate pot, boil cauliflower until slightly tender
  2. In a pan (cast iron works well for this), coat with cooking spray
  3. Pour in heavy cream, paprika, mustard, and garlic powder and whisk until thick over medium heat
  4. Raise heat and quickly add cauliflower and cream cheese. Let simmer while cheese melts and spread through cauliflower (5-7 min)
  5. Add in salt and pepper to liking
  6. Once the cream cheese is all blended and melted through in the cauliflower, add in mozzarella cheese
  7. Lower heat and continue to simmer to let rest of cheese melt (another 5-7 min)
