Broccoli Spinach Fettuccine

What You Need:

  1. 1 package frozen chopped spinach
  2. 2 cups frozen chopped broccoli
  3. 1/2 lb fettuccine
  4. butter (try olive oil butter too!)
  5. olive oil
  6. garlic
  7. 1 cup sour cream
  8. 2/3 cup parmesan cheese (fancy kind or can kind)
  9. sea salt
  10. pepper
  11. cayenne pepper

What You Do:

  1. Boil water in a pot.
  2. Thaw the spinach and broccoli (separately) in a microwave and drain the excess water.
  3. Add the pasta to the pot and boil until ‘al dente’ (10ish minutes).
  4. In a pan, melt ~3 tablespoons butter (medium heat), add in garlic, and sautee. I like to use 5 cloves of garlic.
  5. Increase to medium-high heat and add in the spinach, broccoli, salt, and pepper.
  6. Cook and stir this for ~5 minutes.
  7. Stir in the sour cream over the heat for about a minute and then remove the pan.
  8. Drain the pasta, top it with the vegetables, and sprinkle the parmesan and cayenne pepper.
  9. Bask in the deliciousness.
